A true favorite amongst family and friends during the holiday season. Holiday Roca is simple to make and includes a total of just 4 ingredients.

  • 1 LB Butter - salted or unsalted

  • 1 LB Granulated white sugar

  • Hershey's milk chocolate or dark chocolate (depending on your preference) candy bars, or chocolate chips (like you would use in chocolate chip cookies)

  • Chopped nuts (walnuts, almonds, or your favorite nut)

An important piece to the success of this recipe is having the correct pan. It needs to be a heavy-duty pan with a thick bottom. Inexpensive cookware or Teflon lined will not work for this recipe. It may be worth digging through grandma's kitchen supplies to find a heavy-duty pan that will work best. Another key tool is a wooden spoon, not metal, not plastic, but wooden.

Preparation:
Have ready - Shallow cookie sheet, or pastry pan, determine the quantity of candy bars that will be needed to fill this sheet, and unwrap them and set them aside. Have enough nuts prechopped to be able to cover the top of the sheet.

Cooking:
In a deep pot/saucepan combine the butter and sugar together and cook over medium to high heat until this mixture appears to look like the color of peanut butter. Use hot pads and do not leave this unattended as you must constantly stir this with a wooden spoon to avoid burning the toffee. Once this has reached the "peanut butter stage", remove from heat and carefully pour this mixture into your shallow cookie sheet or pastry pan. Be careful as this mixture will be extremely hot.

Next, place unwrapped Hershey candy bars, or sprinkle chocolate chips on the top of the mixture while it is hot. This will allow the bars to melt, so that you can then spread the chocolate out evenly to coat the top. Once you have evenly spread the chocolate, finish by sprinkling your favorite chopped nuts over the top of the sheet.

Allow this to cool before breaking apart. If you are in a cold climate, we recommend placing this outside or on a cold garage floor to harden.

Tip:
So this is a bit of a strange one, but if you have access to an ice pick (like this one),
it will help in breaking apart the candy.

Tip:
Almonds can be expensive to purchase in large quantities. To accommodate for this, and the fact that we have a dear friend with an allergy to almonds, we typically use crushed walnuts.

Tip:
We keep a separate coffee grinder that we use for the nuts. It makes it super simple to chop them.

Once broken apart, divide into containers, and you're ready for gift giving or eating enjoyment.
